Morning Grub

Mornings can be crazy, causing most people to either skip breakfast or head for the drive-thru.  Before you make the decision to put something into your body that isn't natural and can be harmful to your health, consider this.  In the time it takes you to stand in line or wait at the window, you could have made your meal at home and eaten it.  By preparing your own breakfast in the morning your saving money and staying healthy. If you ask me, that sounds like a good deal.

Skipping breakfast is an epic fail.  When you were told as a child that breakfast is the most important meal of the day, it was the truth.  Nothing could be truer, in fact.  If time doesn't allow for cooking, grab an apple or a banana or one of those cool little fruit cups I told you about on your way out the door.  However, if you have a little time on your hands, here's a few quick recipes you may want to try.

Speedy Breakfast Ideas

Paleo Power Omelet
(Serves 2 people) Total time from start to finish 15 minutes
4 organic eggs
4 egg whites
1/4 sweet bell pepper chopped
1/4 onion chopped
1/4 tomato diced
1 5oz grilled chicken breast (I use the chicken I cook for the week)
3 or 4 fresh spinach leaves
olive oil cooking spray

In a mixing bowl, wisk eggs and egg whites while adding all other ingredients.  Add sea salt to taste.  Spray a small skillet with olive oil spray and pour half of the mixture into the skillet on medium heat.  Let the omelet cook until the bottom is a medium brown color (between 5 to 7 minutes) then flip it over for about 30 seconds.  Repeat this process for the rest of the mixture and you are ready to enjoy a healthy breakfast full of protein and other nutrients to keep your body running at peak performance.

Chicken and Scrambled Eggs
(Serves 1 Person)  Total time from start to finish 10 minutes
2 eggs scrambled
1 5oz chicken breast diced
5 or 6 fresh spinach leaves chopped
1/4 onion chopped

In a saucepan, combine all of the ingredients and cook on medium heat for about 7 minutes or until eggs are completely cooked.  Remove from heat and serve!
